It’s no secret that summer is, by far, my favorite season. I love everything about it. Yes, even the heat. I love the way it feels on my skin. I love sundresses and tank tops and flip flops. I love the smell of sunscreen, freshly cut grass and burgers on the grill. I love 9:00 p.m. sunsets, running through the sprinkler and picnics in the park. I love catching lightening bugs with my kids and flying kites.
You might say I’m a kid at heart. The truth is I’m 100% okay with that sentiment. I really like to experience things I did as a kid with my own kids. It’s so much fun getting to see a bit of my past through their eyes.
One of my favorite memories was when my mom would buy us mini banana splits. It has been ages since I’ve had one but I was suddenly craving a banana split like you would not believe.
I decided to make a banana split surprise for my husband and the boys. Just as I suspected – they were not disappointed!
What you’ll need:
+ mini waffle bowls
+ cut up strawberries & bananas
+ reddi whip
+ chocolate syrup
+ vanilla ice cream (I used my favorite healthier vanilla bean ice cream from Blue Bunny)
Drop one scoop of ice cream into the waffle bowls.
Pour on some chocolate, sprinkle with pieces of bananas and strawberries, and of course, top with whipped cream to maximize the “yum” noises!
Once they are assembled, gather your hot, hungry, willing participants and make them wait while you take pictures like the mean mom you are 😉
Then, when they are salivating, let them dive in and enjoy!
